Keto Beef Chili

When I set out to make a bean-free chili I decided that it was not really that hard to do. Beans are actually just cheap filler for an already hearty recipe. I upped the bacon and the beef and I pretty much had my same recipe.

The carbs in this chili recipe actually come from the tomatoes, onions and peppers. I don’t know about you, but I’d rather get my carbs from vegetables than Doritos. Of course I don’t ever want to go overboard with my carbs in any form, but when I want Keto Beef Chili this is my jam.

One Pot Meal

It’s always nice to toss everything into one pot and just let all the flavors meld together. Keto Beef Chili has all the flavor from the beef and seasons. The beans in traditional chili are just cheap filler to me anyways.

The toppings

This hearty Keto Beef Chili is topped off with sour cream, cheddar cheese, red onion or scallions. I also like to offer cilantro and chopped jalapeños if someone wants more heat. I place all the topping out for my guests to pick and chose what they want to add.

Freezes like a DREAM

Not that there will be much chili left over, but this chili freezes and reheats like a dream. I store in quart sized containers in my freezer for use at a later time. There’s nothing better than pulling out some chili on a rainy weeknight for a super easy dinner. Every one loves Keto Beef Chili and it’s so heart warming too.

Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 1 red bell pepper chopped
  • 2 cloves garlic finely chopped
  • 2 lbs ground beef
  • 3 tbsp tomato paste
  • 28 ounce tomatoes can petite diced
  • 1.5 cups beef broth plus more if needed
  • .5 tsp chili powder
  • .5 tsp salt
  • .5 tsp pepper
  • 2 tbsp taco seasoning

Instructions

  • Heat olive oil over medium high heat. Stir in the onions and bell peppers and cook for 2-4 minutes. Add in the garlic, and cook about 1 minute.
  • Push onion mixture to the side in the stock pot and then add the ground beef to brown.
  • Once the ground beef has started to brown mix with onion mixture. Add in taco seasoning, chili powder, salt, pepper, canned tomatoes with juice, and tomato paste. Stir to fully combine.
  • Pour in beef stock and bring to a simmer. Cover and simmer for at least 1 hour, but up to 3 hours at a low simmer to thicken the chili.
  • Serve with garnish of chopped red onion, chopped cilantro, cheddar cheese, pickled jalapeños, and sour cream.

Notes

*you may want to add more beef broth to thin out your chili.

Cauliflower Cheese Casserole

I’m always looking for easy, delicious and low carb side dishes to compliment my main dish. Cauliflower Cheese Casserole is that dish.

We love all vegetables and salads, but sometimes I’m looking for a side that is heartier. This recipe compliments any piece of meat, chicken or fish.

Cauliflower Cheese Casserole can also stand on it’s own as a main dish for the vegetarians in the group.

This side dish is warm and creamy and gives your a big hug all at the same time. Plus…it’s soooo fricking easy.

Start with Fork Tender Cauliflower

The quick first step to making Cauliflower Cheese Casserole is to steam or blanch the cauliflower florets. A few minutes to get your florets to be fork tender.

Key note to not over cook the cauliflower. We do not want mushy or too soft cauliflower as this dish is meant to mimic classic Mac and Cheese.

Cheese sauce

In a sauce pan over medium heat you will melt the cream cheese, cheddar cheese, cream and seasonings together. You will bring the cream and cream cheese to a slow simmer.

Then add in the shredded cheddar to mix and melt all the cheeses together. The cheese sauce is meant to be thick for the Cauliflower Cheese Casserole.

Gently folding cheese and cauliflower

Taking your wooden spoon or rubber spatula slide along the inside of the bowl to the bottom of the Cauliflower Cheese Casserole mixture. Then bring your spoon up and folding the cheese around the cauliflower.

Keep folding a few times to completely cover all areas of the cauliflower with the creamy cheese mixture.

Pour all of the mixture into a small casserole dish. I use my favorite 6×11″ dish.

Baking

Once your casserole dish is full sprinkle the remaining cheddar cheese and parmesan cheese evenly over your Cauliflower Cheese Casserole.

Place casserole in 400* oven for 15 minutes until bubbly and hot. At the end of cook time I like to turn my oven to broil for a few minutes. Do not look away as you will only need 1-2 minutes to get the top of your casserole brown and crispy.

Storage

If there is any Cauliflower Cheese Casserole leftover this dish is A.MAZE.ZING as left overs. Simply store in an airtight container in the fridge for up to a few days. Reheat in the micro for a quick small meal.

Cauliflower Cheese Casserole

Ingredients

  • 6 cups cauliflower florets
  • 1 cup cream
  • 4 tbsp cream cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp parsley dried
  • 2 1/2 cups cheddar cheese, shredded divided
  • 1/2 cup parmesan, shredded

Instructions

  • Preheat oven to 400*.
  • Bring 3-4" water to a rapid boil and steam cauliflower florets to fork tend. About 7-10 minutes. Drain cauliflower and set aside in a large clean bowl.
  • In medium saucepan over medium heat whisk together cream, cream cheese, garlic powder, onion powder, salt and dried parsley. Bring to a small simmer.
  • Add 2 cups of the shredded cheddar cheese to the simmering cream mixture. Gently stir until fully combined into a thick creamy cheese mixture. Remove from stove top.
  • Pour hot cheese mixture over the cauliflower. Gently fold cauliflower into the melted cheese to fully coat all pieces. Transfer cheese covered cauliflower to a 6×10" casserole dish and smooth top to spread to all corners.
  • Sprinkle remaining 1/2 cup cheddar cheese and 1/2 cup parmesan cheese over the top of the cauliflower.
  • Bake for 15 minutes at 400*.
  • Optional…turn oven to broil to slightly brown and crisp up the top of your Cauliflower Cheese Casserole. Broil for 1-2 minutes.
  • Remove from oven and enjoy

A frozen treat

Besides being totally addicted to the flavor combo of peanut butter and chocolate I like that these frozen Chocolate Peanut Butter Fudge Bars are only 4g net carbs and they take time to eat.

I hate when I have a dessert that in 2-3 bites is gone. This lick-able treat takes a good 10-12 minutes to eat. Pull one of these Chocolate Peanut Butter Fudge Bars from the freezer and you can really enjoy it…and not need to go back for a second or third helping.

My favorite ice cream flavor of all time is Peanut Butter ‘N Chocolate. Now with these Chocolate Peanut Butter Fudge Bars I can have this treat and still stay in Ketosis.

Hot Summer treats

Picture this…hot summer night and you’ve got a hankering for something cold and sweet. You open the freezer and there waiting for you is a creamy and chocolatey Chocolate Peanut Butter Fudge Bars.

That rich and velvety texture satisfies every little sweet desire while trying to stay low carb.

There aren’t many commercially available options for keto and low carb treats that are 1. affordable 2. delicious and 3. are actually low carb. Until now with these Keto friendly Chocolate Peanut Butter Fudge Pops.

Easy, but you MUST wait

I make a few different flavors of these Keto Bars or my Keto Creamsicles at one time to always have a bunch in the freezer. For the best results you really need to freeze them for 24 hours or more for a solid pop.

Keto Ice Cream is always too icy

For the past 3 years I have been searching for a soft and scoopable keto friendly ice cream, but no luck so far. They all are just too icy and rock hard.

I’ve had some success with using Xylitol in my ice creams, but that doesn’t always work well. Don’t get me wrong…I like Xylitol but, there are issues with gas and tummy distress.

Also there is the real danger to animals if ingested.

No vodka used

Some recipes call for vodka to help with the iciness. If I’m serving to kids or people that don’t drink then we have a problem. I always have to disclose that my triple berry ice cream is spiked with liquor…and that doesn’t always go off so well.

It’s such a minimal amount to keep the iciness at bay and you don’t even taste it, but some people don’t like that.

Who doesn’t like a Keto Fudge Bar?

In comes the popsicle. Or more specifically a creamy and velvety Keto Fudge Bar. With all the chocolatey sweetness of the original, but with almost no carbs.

Ok…there are technically 2g net carbs per, but still so low. It’s a little dessert like this that got me through those late night cravings for something sweet…without totally falling off the wagon.

Fudgesicle and Popsicle Tips

It’s always fun to be handed a perfectly shaped Keto Chocolate Peanut Butter Fudge bars straight from the freezer on a hot summer day.  I get a skip in my step when I make my own pops at home. To pull one out of the freezer that looks like store bought is a treat in itself.

Professional looking fudgesicle or popsicle molds don’t take up a ton of space in your freezer. They also wash right in your dishwasher.

Once your pops are frozen solid you can store your Keto fudge bars or popsicles in a ziploc. I have a silicone mold and a metal/plastic fudgesicle or popsicle mold

The molds

Both the plastic and silicone versions work well. I prefer the silicone mold to the plastic mold as I can peel back the sides of the fudgesicle or popsicle.  Either version is inexpensive and easily found at Target or on Amazon at this link.

The molds range from ($12-30). You can use them over and over and over again for your Keto Fudgesicles or in any flavor imaginable. For a small investment in your own molds you can use them again and again.

However…you don’t need fancy fudgesicle or popsicle molds! Any small paper dixie cup will work just fine. Sometimes I even prefer the small paper cups to the molds as they are smaller serving size and there’s no clean up.

The molds typically come with a cover to hold the stick in place. If you are using paper cups simply wait until your mixture is slightly frozen. Place a fudgesicle or popsicle stick in the center of the slushy cup.

If the stick still falls to the side you can wait a little longer for your slush to get a little thicker.

The un-molding

To unmold your Keto fudge bars from the plastic molds simply set the mold out on the counter for 5-7 minutes.  If you can not wait then dip the mold in warm water for 30 seconds to a minute. Then slide a single fudgesicle out.

The silicone molds are slightly easier as you gently peel back the sides of each fudgesicle. Give your pop a tug every couple seconds to see if they’re loose yet. We don’t want to soften them any more than absolutely necessary.

If the stick comes out before the fudgesicle or popsicle is fully frozen then they just weren’t frozen enough…and that really sucks! You’ll want to freeze your Keto fudge bars or popsicles at least overnight.

Preferably a full 24 hours of freezing just to be certain they’re hard enough to unmold. Trust me…there is nothing more sad than having part of your slush still at the bottom of the mold.

Little paper cups are perfect

The cool thing about using the little paper dixie cups is that there is no unmolding to be done.  Simply remove your cup from the freezer and tear away the paper cup to enjoy. I use a small knife or a pair of scissors to make a small cut in the top of the cup. Then I tear the cup awayfrom your Chocolate Peanut Butter Fudge Bars. Easy peasy!

If you use the molds there is another step in the process before you can enjoy your Keto fudge bars. After I unmold all of the fudgesicles and popsicles and I place them on the tray.

Then I refreeze them for 10 minutes out of their molds before putting them in a freezer bag. You can also separate them in their freezer bags by placing extra strips of parchment paper in between each pop. 

Storage

Plastic freezer bags (gallon sized ziploc bags) ensure that your popsicles don’t pick up the flavor or smell of anything else in your freezer.  No one likes the taste of Chocolate Peanut Butter Fudge Bars with a hint of enchilada casserole, right?

This extra step ensures that any melting/softening that happens when you unmold them doesn’t mess up their shapes. You wouldn’t want to cause them to stick to one another.

The parchment paper in between each pop as you place in the freezer bag keeps the fudgesicles and popsicles separated.

Instructions

  • In a small saucepan vigorously whisk together the cream, cocoa powder and sweetener. Bring to a slow simmer for 1 to 2 minutes. Remove from heat and set to cool a bit.
  • Pour chocolate mixture in to a large measuring cup with a spout. Mix in the almond milk and dd vanilla extract. While whisking the chocolate mixture sprinkle in the xanthan gum and whisk together. Set aside to cool more.
  • Using a butter knife smear a small amount of peanut butter into each popsicle mold or dixie cup. You want the peanut butter to stick to the sides in places for the desired swirl effect at the end.
  • Once the chocolate mixture has cooled to lukewarm pour into each prepared mold. Cover your mold and place your popsicle sticks into each of the fudgsicles.
  • Freeze for at least 24 hours. Follow popsicle and fudgsicles tips to unmold and store. Enjoy!

*Popsicle mold is not necessary. You can use small paper dixie cups just as well.

What is Semaglutide?

For the past 5 years I have really only shared keto recipes and low carb information. I’ve shared my story of weight loss and health in The Kellie Kitchen…and I am always looking for new ways to help myself and my followers on their journey.

So… What is Semaglutide? After doing much research and so many people talking about Semaglutide for weight loss medication I need to weigh in with some information so you can decide for yourself…pun intended.

I’d like to start by saying that YOU need to do what is right for YOU. This blog post is merely a chance for me to share what I have found out about what most are saying is a miracle for them. It’s not for me (or anyone) to judge whom is deserving or needs anything different from what they think they need on their health journey.

Type 2 Diabetes and Obesity are major health issues affecting millions of people worldwide, and many individuals struggle to lose weight despite their best efforts.

Fortunately, there is a new weight loss medication on the market that has shown promising results in clinical trials.

The medication, called “Semaglutide,” is a prescription-only drug that is taken by injection once a week. It works by mimicking the effects of a hormone called GLP-1 (glucagon-like peptide-1), which helps regulate appetite and food intake. Therefore Semaglutide for weight loss has been highly successful.

GLP-1 is a hormone that is produced by cells in the intestine in response to food intake. It stimulates insulin secretion by the pancreas, which helps to lower blood sugar levels. GLP-1 also suppresses the release of glucagon, which is a hormone that raises blood sugar levels.

GLP-1 works to increase insulin levels by activating cells in the pancreas. It also triggers hormone release to delay the emptying of the stomach, sometimes causing nausea.

Tips to Manage the Side Effects of Semaglutide

Semaglutide can cause side effects, which can vary in severity and duration. Here are some tips for managing the side effects of Semaglutide:

  • Stay hydrated: One common side effect of Semaglutide is diarrhea, which can lead to dehydration. To prevent this, it is important to drink plenty of fluids, especially water, to help replace lost fluids.
  • Eat a healthy diet for nausea. Another common side effect of Semaglutide is nausea, which can be relieved by eating more protein and fiber and avoiding foods that are high in fat, carbohydrates or spices.
  • Nausea…Increase protein and fiber in diet in general, but also concentrate on higher protein intake 1-2 hours before the weekly injection.
  • Take the medication at the same time every day: Taking Semaglutide at the same time every day can help prevent side effects such as nausea and diarrhea.
  • Constipation…daily miralax or stool softener or both until side effect subsides.
  • Talk to your healthcare provider: If you are experiencing severe or persistent side effects from Semaglutide, it is important to speak with your healthcare provider. They may be able to adjust the dosage or recommend other ways to manage the side effects.

Where do you get Semaglutide?

The best place to start the conversation on if you are a candidate for Semiglutide for weight loss is your Primary Care Physician. Odds are that you and your doctor has discussed weight loss before.

Once your doctor has determined that you are a candidate for this medication then you will get a prescription to your local pharmacy.

Getting this BRAND NAME medication without insurance is VERY expensive. Through insurance and with a discount card some people can qualify for a major discount.

I am not going to discuss or go into any details on insurance coverage as this is unique to each person and their plan. Check with your Health Insurance plan, your pharmacy availability, and also many of the drug companies have a discount card.

Compounding Semaglutide

Compounding Pharmacies and online tele-health or med spas do have a generic version of Semaglutide for weight loss. I will have another post coming soon with what I am finding during this tidal wave of new information.

The Summer Party Season

I feel like the entire Summer season from Memorial Day through Labor Day should be celebrated with everything red, white and blue. I usually hit several parties during the summer months and this low carb Red White and Blue Cheesecake Tart is always a huge hit.

There’s nothing more festive at a Summer party than a colorful berry dessert. I love that I can whip this one together with minimal ingredients and very little baking. Not only is it pretty, but delicious and low carb.

I even served this for a Father’s Day BBQ. My father is not a full on keto person and not always a huge fan of low carb desserts, but this time he had TWO pieces of my Red White and Blue Cheesecake Tart. And he took a third piece home with him.

The season starts with Mother’s Day and a lovely LEMON version of this Cheesecake Tart for my mom. Then we have Memorial Day weekend as a celebration and remembrance of our troops and the sacrifice they made with their lives for our country and our freedom.

After that we have Father’s Day and the holy grail of Patriotism, 4th of July to celebrate. Of course we have 5 family birthdays to celebrate in July and August. The Red White and Blue Cheesecake Tart makes a presence front and center at all these parties.

We round out the Summer season with a big bash over Labor Day weekend. The dominant colors in my house and my kitchen from May through September are red, white and blue and we are have to make dessert that color, too!

Minimal baking, some chilling

No one really wants to do a whole lot of baking in the Summer time. When the sun is out and the ocean is calling the last thing we want is to be heating up the house and tied to the oven.

The crust just needs 12-15 minutes to toast all the ingredients together and give us a cookie feel. The rest of the time for these Red White and Blue Cheesecake Bars is chill time. It’s best to chill the whole tart for at least an hour but up to 4 hours or more.

Dry the Berries & Spacing

I have found it best to make sure that your berries are wash and FULLY DRY before you place them on your cheesecake layer. You really don’t want the colors of the strawberries or the water droplets to pool on your white cheesecake filling.

And while we are at it, because the Red White and Blue Cheesecake Tart is such a pretty dessert, keep in mind where you are placing the berries. You want the berries to line up with where your knife is going to slice through the tart. This dessert tastes all the same, but looks prettier when the berries aren’t smashed into the cheesecake layer.

The Tart Pan

A simple word about the tart pan, because it’s not a usual size that you would have for this Red White and Blue Cheesecake Tart. You don’t have to use the 8×11″ tart pan size. You can really use any size you want. The usual casserole dish is 9×13″ and is perfectly fine to use.

Just know that your crust and filling will be stretched thin to fit every side and corner of this larger sized dish. You could simply increase the amounts of the ingredients to 1 1/2 the amounts listed above. Of course you would have to adjust your nutritional count as well.

I also change it up a bit and I like to make my Strawberry Cheesecake Cups. They are fun and no bake as well. These little delights are also lower carb because there’s no crust. Not only are they pretty easy, but they are also lower carb count because they have no crust. Almond flour is low carb, but not carb free.

Red, White and Blue Cheesecake Tart

With very little baking involved you can whip this fun and low carb Red, White and Blue Cheesecake Tart for your Summer party in no time.

  • ½ cup blueberries
  • 1 cup strawberries

Instructions

  • Preheat oven to 350* and prepare 8”x11” tart pan with either oil spray or parchment paper.
  • In microwave safe bowl melt butter in 30 second increments until melted. Add almond flour, psyllium husk, baking powder, and salt. Mix together all ingredients with the melted butter until thoroughly mixed and slightly crumbly.
  • Press crust mixture into tart pan making sure to go all up the sides to create a well for your cheesecake mixture. Press crust evenly and firmly into you pan.
  • Place crust in center of 350* oven and bake for 15mins. Remove from oven when edges start to fully brown. Cool completely on the counter or in the fridge.
  • Using a hand mixer or a stand mixer with a wire whisk attachment and in a clean bowl whip the heavy cream for about 3 minutes. When the cream starts to thicken add the softened cream cheese, sweetener, lemon juice and vanilla.
  • Wash, dry and slice strawberries and blueberries to your liking. Set aside the berries.
  • Whisk together the cheesecake filling for another several minutes until all ingredients are creamed together and thick.
  • Spoon the cheesecake filling into the cooled crust and tart pan. Smooth the top of the filling to be beautiful and even with the top of the edges of the crust.
  • Line top of cheesecake filling with DRY berries how ever best and in a decorative style you like. Keep in mind the placement of your berries and where you will be slicing the tart. (You don’t want the berries to go splat into the cheesecake filling when it’s time to cut the dessert.
  • Cover gently and chill for at least one hour and up to overnight. Keep chilled or in a cool place until ready to serve. Slice and serve.

Notes

**the tart pan is not fully necessary as you can do this in really any type of pan, however you will need to adjust your crust measurements. You will need to have enough crust to go up the sides of the pan as well as covering the bottom of the pan.
For instance if you use a 9×13″ pan, which is more standard in size, I would do the entire recipe at 1 1/2 of all the measurements.
Of course you will need to adjust the nutrition calculations to accommodate for the extra ingredients and number of servings of the bars.

Keto Strawberry Cheesecake Cups are one of the easiest and most elegant Keto friendly dessert to make. These cups are perfect for a party, too! You can use ramekins or even those clear plastic cocktail cups.

I just want easy…

Most of the time people that have “gone Keto” just want easy. They see all these fabulous and complicated recipes and it freaks them out. I’m part of the problem….and sorry for that. But these Keto Strawberry Cheesecake Cups are my attempt to ask for forgiveness.

This dessert is delicious, low carb at only 3g net carbs and SUPER easy. As in no bake and minimal clean up. Keto Strawberry Cheesecake cups take all of 10 minutes to whip up, you can use frozen berries of any variety, and they even freeze pretty well.

These got me in trouble

And they are delicious, but there are so many steps and lots of baking and chill time with that dessert. Not everyone has the patience for that. Don’t get me wrong..they are delicious, BUT time consuming.

When someone is starting Keto the last thing they need is for something to be time consuming or require several steps. I find that in the beginning of your journey it’s best to have a few go-to treats to get you through the rough patches.

The Raspberry Cheesecake Bars got me in trouble because they are so delicious and every one wanted them all the time. I’m ok making these when I have time on my hands, but when I need something quick I make the Keto Strawberry Cheesecake Cups, for sure!!

No Bake…Say What?

So easy! Low carb and NO BAKE!!!

Then I got to thinking about this “no bake” thing. I was on a lemon and lime kick a few weeks ago and I had some inspiration. So I came up with this great recipe for Keto Lime Cheesecake Cups that required no oven time…no crust and no eggs.

The only problem with this dessert was that the guests couldn’t get their tongues to the bottom of the cups! Tart and sweet and the perfect size. But…I still had the stovetop cook time for the curd. I wanted a ZERO cook time and that’s how I came up with Keto Strawberry Cheesecake Cups.

No bake and Keto Friendly Lime Cheesecake Cups

ZERO BAKE TIME

Mashing strawberries with a touch of sweetener and some lemon juice is the first step. Set that aside. In another bowl whip together the cheesecake ingredients-no eggs so no baking! The Keto Strawberry Cheesecake cups then are just about layering the fruit and cheesecake layers. The recipe is best if you chill for about an hour, but totally not necessary. ENJOY!

These Keto Strawberry Cheesecake cups are really delightful. The sweetness of the strawberries and the creamy sweetness of cheesecake in these darling little cups makes for an elegant little dessert.

Ingredients

Strawberry Layer

  • 2 cups strawberries frozen or fresh, chopped plus a few extra strawberries for garnish
  • 1 tbsp Lakanto Monkfruit Sweetener or sweetener of choice, powdered
  • 1 tbsp lemon juice

Cheesecake Layer

  • 2 cups heavy cream room temperature
  • 8 oz cream cheese room temperature
  • ½ cup Lakanto Monkfruit Sweetener or sweetener of choice, powdered
  • 1 tbsp lemon juice

Instructions

  • In a small bowl mash the strawberries with a fork. Leave the strawberry mixture chunky. Mix in sweetener and lemon juice, then set aside.
  • In a separate clean bowl using a hand mixer whip together 2 cups heavy cream, sweetener, cream cheese and lemon juice. Whip continuously until mixture thickens to a very thick consistency.
  • In 10 small cups (glass jars or ramekins) using half the strawberry mixture spoon in a small layer of strawberry into the bottom of each cup. The spoon equal amounts of the cheesecake mixture into each of the cups on top of the first layer of strawberry mixture. With the second half of the strawberry mixture gently and beautifully spoon equal amounts of strawberry over the cheesecake layer.
  • Garnish with sliced strawberry and lemon zest. Refrigerate and serve cold.

Notes

* a note on the sweetener and why it’s necessary to POWDER your low carb sweetener.  Sugar alcohols like erythritol tend to stay granular or re-crystalize as they cool.  By running your granular sugar alcohol through a clean coffee grinder and making it into a powder you less the re-crystalization of the sweetener.
I actually do not mind the texture of the re-crystalized sugar alcohol, but some people are bothered by the crunch in their teeth.  Mind you it all tastes the same.  Please let me know if you need any other tips on baking with sugar alcohols.  
**Garnish with lemon zest or basil leaves is totally optional…but beautiful

Ingredients

Pound Cake

Lemon Buttercream Frosting

Instructions

  • Preheat oven to 350° and line a loaf pan with parchment paper.
  • Using a hand mixer, blend together the eggs and sweetener until slightly frothy. Add in all the other ingredients to the eggs and blend 1-2 minutes more until fully combined. Pour batter into parchment paper lined loaf pan.
  • Bake loaf in 350* oven for 45 minutes or until toothpick comes out clean. Set aside to fully cool.
  • In a clean bowl add together all the ingredients for the frosting. Using your hand mixer beat all the ingredients together until smooth and creamy. Put in fridge to harden while the loaf is cooling.
  • When loaf is cool to the touch frost top of the loaf generously. When storing the loaf in the fridge the frosting will harden.

Notes

When you slice the refrigerated Keto Lemon Pound Cake to enjoy you may want to give it 15-20 seconds in the micro just to warm it slightly. Not too long in the micro or your frosting will all melt away.

So, when I make this recipe I’m usually making these in bulk. I’ll do one batch for dinner that night. Then I’ll make 1-3 batches to freeze for later.

When I freeze the RAW hot dog and dough I’ll spend them out on a cookie sheet and freeze them flat. Once they are frozen I’ll transfer them to a ziplock bag for compact storage.

Read below and I tell you how to bake the Fathead Pigs in a Blanket from frozen in no time at all. I even bake them in the morning before work and school when I have nothing else in the fridge to pack for lunch.

My Fathead Dough tips…

For pizza best to make the dough, roll out between two oil parchment. Then you can freeze it flat to use later. Or use it fresh right then. 

Cooking pizza from frozen you want to thaw it completely on counter top then bake. 

Also for pizza (Lately) I’ve been baking the dough first and then adding the sauce and topping and then bake again when fully assembled. Peter like the crust crispy….this helps as it will never be super crispy but it def helps. 

For the pigs…it’s kinda like play dough. Because the packages of hot dogs are all different quantities you will have to roll the dough in strips. I always eyeball the size. Using a knife you sort of cut a square and roll the dog in the square. 

Once the Fathead Pigs in a Blanket are rolled you can bake fresh or freeze them raw. Cooking from frozen I pop them in a 375-400* oven for 15 mins. Then maybe broil for 30sec to a minute. 

I always make triple the batch of pigs and freeze in quantity for later use.

Freeze whatever amount of the fathead pigs in a blanket that you are not going to eat right now. Freeze them flat on a cookie sheet. Once frozen trains fee them to a ziploc bag to store in the freezer. 

Baking thawed

As I mentioned, I make one batch to cook for dinner that night, so the dough is raw (not frozen) around the hot dog. I line a baking sheet with parchment paper and line up the dogs about 2″ apart.

As a side note, sometimes I’ll put tonight’s dinner batch in the fridge just to firm up the dough a bit.

I preheat the oven to 350-375* and I place the cookie sheet in the oven for 15-18 minutes. Just watch the cooking at the end to bake to desired browning of the crust.

The crust

The Fathead dough can be used for some many recipes. After I roll out the dough between two sheets of oiled parchment paper. For this recipe, I use pizza cutter to make small rectangles for each hot dogs. I eye ball it, but usually get about 7-8 Fathead Pigs in a Blanket from one batch.

I used an “everything but the bagel” seasoning, but you can top with sesame seeds or rock salt or nothing at all. Simply sprinkle your Fathead Pigs in a Blanket just before they go in the oven.

Pulled from the freezer

I like to make a batch of these Fathead Pigs in a Blanket and let them cool. Then I pop them in the freezer to reheat at a later time. When you’re in a pinch it’s nice to have a ready made meal on hand. Also great for kid and work lunches.

First I roll each hot dog up in the dough and line then up on a cookie sheet. It does not matter how close the Pigs are on the cookie sheet because you will be sticking the entire batch into the FREEZER. Once they are frozen I transfer them to a ziploc bag for compact storage.

When I am ready to bake these for a quick meal I first preheat the oven to 375-400* . I line up the FROZEN RAW Fathead Pigs in a Blanket on a cookie sheet with about 2′ in between each hot dog. I bake the dogs from frozen for about 15-18 mins.

Fathead Pigs in a Blanket Dough

This dough is so versitle that I use it for pizza, pigs in a blanket, calzones and even lasagna.

Ingredients

Pizza Dough

  • 2 tbsp cream cheese
  • 1 1/2 cup mozzarella cheese
  • 3/4 cup almond flour
  • 1 egg room temperature
  • tsp salt

2 sheets of parchment paper

    Instructions

    Basic Fathead Dough

    • In microwave safe bowl place mozzarella cheese and cream cheese. Microwave for 30 seconds to 1 minute on high. Take out and stir. Put back in microwave for 30 seconds, then stir again.
    • Depending on your microwave you will may need an additional 30-60 seconds until all melted and combined. 
    • Take cheese out of microwave and stir in the almond flour and egg until it forms into a sticky ball of dough. You may want to use your hands or a sturdy wooden spoon.
    • Place a sheet of parchment paper on counter and drizzle with a tiny bit of olive oil. Place ball or log of dough in middle of bottom parchment paper.
    • Oil a second sheet of parchment paper and place face down on top. Flatten down with your palm. 
    • Then with a rolling pin (or something heavy and round) roll out dough into a 1/4″-1/2″ thickness in between the two sheets of parchment paper. When you have your desired thickness and shape peel off the top sheet of parchment paper. 
    • This is PIZZA shaped Fathead dough.
    • ONCE YOU HAVE THE RAW DOUGH READY you can decide what you want to make…pizza, Pigs in a Blanket, calzones, etc.

    Rolling Pigs in Fathead Dough

    • Place a log of fathead dough on oiled parchment paper. Cover with second piece of oiled parchment paper and roll to desired thickness. (about 1/4" thick)
    • Measure hot dog on sheet of dough. Trim dough to desired length to cover hotdog or sausage.
    • Roll a single hotdog in the dough to cover hotdog circumference.
    • Repeat until all hotdogs are rolled in dough.
    • This dough recipe should cover 8-10 hotdogs, but there a few factors. The quantity of finished product will depend on the length and circumference of your hotdogs, as well as the thickness you roll your dough.
    • Leave your Fathead Pigs in a Blanket plain or add desired toppings. I like to use "everything but the bagel" seasoning.
    • Because there are many steps in making this recipe I always like to double the dough recipe and make as many of the Pigs in a Blanket as possible. A double recipe of dough usually works with 3 packages of 6 hotdogs (18 total dogs)

    Cooking Fathead Pigs in a Blanket (NOT FROZEN)

    • Preheat oven to 350* and line a baking sheet with parchment paper. Place as many dogs on the sheet as you would like to cook.
    • Space the dogs 1-1.5" apart to allow for spreading.
    • Bake for 15-20 minutes. Check doneness at 15 minutes. Turn oven to broil for 1-2 minutes to fully brown the top of the Pigs in a Blanket dough.

    Storing RAW Pigs in a Blanket

    • Line your rolled Pigs in a Blanket on a parchment lined cookie sheet. Place in freezer for several hours or until fully frozen.
    • Once frozen you can transfer the dogs to a large ziploc and store in the freezer.

    Cooking Fathead Pigs in a Blanket (FROZEN)

    • Preheat oven to 400*
    • Place frozen dogs on a parchment lined baking sheet with spacing for room in case they spread.
    • Bake from frozen in 400* oven for 20-30 minutes. Check doneness at 20 minutes.
    • Turn oven to broil at the end of cook time for 1-2 minutes to brown the dogs to your desire.

    Special items may be needed by not necessary….pizza stone and rolling pin.

    Macro calculations do NOT include the values for the hot dogs. Because I do not know which hot dogs you will use you must calculate this on your own. I use Hebrew National All Beef Hot Dogs from Costco. They’re the best buy and flavor in my book!

    However, Applegate Farms Uncured All Beef Hot Dogs are Nitrate free and are probably the best on the market nutritionally speaking.

    The Super Bowl Dip of all Dips

    Aren’t we lucky living a keto lifestyle that some of THE best dips and spreads are by nature already low carb? Usually it’s what we dip IN the dip that skyrockets the carb count….tortilla chips, pita crisps, potato skins, and french baguette.

    Honestly, I look forward to Super Bowl, or any party for that matter, simply for this dip…and the commercials 🤪

    However, you can consider making some simple low carb swaps. Ditch the high carb the chips and pita crisps and baguette slices to make this famous dip stay low carb. Try celery or jicama sticks for a great crunch.

    Cruciferous vegetables, like cauliflower or broccoli are also a great stand in for the heavy carbs. And hello…pork rinds! Pork Rinds are a great no carb stand in for any chips.

    In this recipe for Buffalo Chicken Boats, I’ve taken this dip to meal time staple by serving in a roasted spaghetti squash.

    Keto Buffalo Chicken

    Spaghetti Squash

    My favorite way to get started with Buffalo Chicken Boats is to roast the spaghetti squash. I don’t even olive or season them because these guys take on the flavor of the buffalo.

    Roast in the oven for about 35-45 minutes in a 350* oven. This can be part of your weekly meal prep well before you need to be putting dinner on the table.

    You may even roast the halves and let them completely cool. Then simply FREEZE them for later use in a number of different dishes.

    Personally, I like to go with smaller spaghetti squash (large palm sized). This size is easier to handle, slice and great as a single serving.

    Franks Buffalo Wing Sauce

    Franks Wing sauce is really the OG (original) in my book as far as buffalo wing sauce goes. It’s naturally almost no carbs and readily available at most major supermarkets.

    There are other brands available such as Primal Kitchen, but Franks is my go to!

    Creamy Chicken Mixture

    The first step in making the creamy buffalo chicken mixture is to heat a saucepan over low to medium heat. Next you will add in the mozzarella cheese, scallions and stir until fully melted.

    Next you will fold in the shredded pre-cooked chicken. Make your own chicken or buy it in rotisserie chicken form or even buy it pre-shredded. I have even heard of some people using canned chicken, but I have never tried it.

    At this point in your cooking the dip is made. You could essentially eat this dip right now. I won’t tell if you eat this Buffalo Chicken right from the pan.

    Assemble

    Once the spaghetti squash is roasted just set it aside to cool. Then, simply scrape the strands of squash away from the inner part of the shell. Place the prepared shells in a casserole dish face up and ready to be stuffed.

    Next, spoon equal amounts of the creamy Buffalo Chicken Boats mixture into each of the 4 spaghetti squash. Don’t worry if you have extra chicken mixture. The size of your spaghetti squash may prohibit fitting all the mixture into the 4 halves. Simply save the extra for later.

    Bake

    Place your casserole dish into at 350* oven and bake for 10-15 minutes or until fully heated through. Then I like to broil for 1-4 minutes at the very end for a crispy and bubbly finishing touch.

    Buffalo chicken dip is already low carb…it’s usually the stuff you eat with it that adds the carbs! These Buffalo Chicken Boats are a hearty meal with our favorite Buffalo Chicken flavor.

    Ingredients

    • 2 spaghetti squash roasted (about 4 cups total)
    • 3 cups chicken shredded (rotisserie or cooked chicken breast)
    • 8 oz cream cheese room temperature
    • 1 cup mozzarella cheese shredded
    • ½ cup Buffalo Sauce Franks
    • 1/2 cup Ranch dressing
    • 2 tbsp green onions chopped

    Toppings

    • ¼ cup cheddar cheese shredded
    • 2 tbsp green onions chopped
    • 2 tbsp blue cheese crumbles

    Instructions

    • Preheat oven to 350*
    • Cut spaghetti squash in half lengthwise and scrape out seeds. Place the spaghetti squash face down on a (oiled or sprayed for non-stick) foil lined rimmed baking sheet. Bake for 30-45 minutes, or until soft. Cook time will depend on the size of spaghetti squash you use. Remove from the oven and set aside. *This step can be done well in advance as we will be fully reheating the entire dish once the buffalo chicken mixture is combined and ready for stuffing.
    • In a saucepan combine cream cheese, ranch, and buffalo sauce. Stir and mix together until fully melted and combined. Stir in the mozzarella cheese and chopped green onions to the melting buffalo mixture. Continue stir over low to medium heat until all is melted together.
    • Remove saucepan from the heat and fold in the shredded chicken to the melted cheese mixture until fully combined.
    • Using a fork gently pull the spaghetti “noodles” away from the inside of the shell of your spaghetti squash, while still keeping the shell fully intact. Do this to all four halves of your spaghetti squash. Place your spaghetti squash side by side face up in a lined casserole dish.
    • Equally divide the buffalo chicken mixture into your spaghetti squash halves. Amount will vary depending on the size of each of the spaghetti squash halves. *If you have too much filling you can set this aside in an airtight container in the fridge to eat later with celery sticks, pork rinds, or just eat and heat with a fork.
    • Sprinkle each squash half with blue cheese crumbles, chopped green onions and cheddar cheese.
    • Bake your dish at 350* for 10-15 minutes or until heated through. Broil for 1-4mins at the end for a bubbly and crispy top.

    Notes

    *If you have too much filling you can set this extra aside in an airtight container in the fridge to eat later with celery sticks, pork rinds, or just eat and heat with a fork.
    *Baking the spaghetti squash can be done well in advance as we will be fully reheating the entire dish once the buffalo chicken mixture is combined and ready for stuffing.

    Weight Loss Medication

    ALL WEIGHT LOSS MEDICATION DESCRIBED BELOW ARE TO BE USED IN CONJUNCTION WITH BETTER/HEALTHIER FOOD CHOICES, DAILY PURPOSEFUL MOVEMENT/EXERCISE, REDUCE STRESS, GET QUALITY SLEEP, AND ADEQUATELY HYDRATE.

    What is GLP-1?

    GLP-1 is a hormone that is produced by cells in the intestine in response to food intake. It stimulates insulin secretion by the pancreas, which helps to lower blood sugar levels. GLP-1 also suppresses the release of glucagon, which is a hormone that raises blood sugar levels.

    Semaglutide is a GLP-1 agonist and the active ingredient in the brand name drugs Ozempic and Wegovy. More on these two brand name weight loss medications below.

    What is GIP?

    GIP is produced by cells in the small intestine and is released in response to the presence of nutrients, particularly fat and glucose. It stimulates insulin secretion by the pancreas, which helps to lower blood sugar levels. However, unlike GLP-1, GIP does not suppress the release of glucagon.

    Trizepatide is BOTH a GLP-1 and GIP. Trizepatide is the active ingredient in the brand name drug Mounjaro.

    Ozempic, Mounjaro, Wegovy

    These are the brand names give by the drug manufacturers currently on the market for purchase at your local pharmacy.

    All 3 of these medications have the active ingredient Semaglutide (Ozempic or Wegovy) or Trizepatide (Mounjaro).

    More weight loss medications are currently in clinical trials and will be coming to market sometime in late 2023 or 2024.

    Weight Loss Medication: SEMAGLUTIDE

    WEEKLY: Injectable brand name is Ozempic (FDA approved for type 2 diabetes)

    WEEKLY: injectable brand name is Wegovy (FDA approved for chronic weight management in adults with obesity or over weight with at least 1 weight-related condition such as high blood pressure, type 2 diabetes, or high cholesterol)

    DAILY: Oral brand name is Rybelsus (FDA approved for Type 2 diabetes)

    Semaglutide is a GLP-1 agonist created for Type 2 Diabetes and FDA approved under the brand name Ozempic in 2019. It was approved for the indication of weight loss under the brand name Wegovy in June 2021.

    GLP-1 works to increase insulin levels by activating cells in the pancreas. It also triggers hormone release to delay the emptying of the stomach, sometimes causing nausea.

    Studies suggest that daily ORAL semaglutide should be taken as an add-on therapy to metformin AND moderate to robust lifestyle changes to diet and exercise. Daily oral semaglutide is provided as an option for those that are unable or unwilling to self-administer injectables.

    Notes on Semaglutide

    AVOID WHEN: History of Thyroid C-cell tumors; Pregnant; Breastfeeding; Trying to conceive; History of anorexia/bulimia

    SIDE EFFECTS: Nausea (44%); Vomiting (25%); Diarrhea/GI distress (30%)

    EXPECTED RESULTS: When used alongside moderate to robust lifestyle management (200 min exercise/week, healthier diet, bimonthly nutritionist visits) patients observed 10-14% weight loss, maintained over 2 years.

    Synopsis and potential benefits…

    Semaglutide is a prescription weight loss medication that belongs to a class of drugs called glucagon-like peptide-1 (GLP-1) agonists. It is primarily used to treat type 2 diabetes. However, it has also been shown to be effective in promoting weight loss.

    1. Promotes weight loss: In clinical trials, semaglutide has been shown to be effective in helping people lose weight. In one study, people taking semaglutide lost an average of about 11% of their body weight, compared to about 3% in the placebo group.
    • Improves blood sugar control: By helping to lower blood sugar levels, semaglutide may also help improve blood sugar control in people with type 2 diabetes.
    • May improve other health markers: In addition to weight loss and blood sugar control, semaglutide may also improve other health markers such as blood pressure, cholesterol levels, and markers of inflammation.
    • Can be taken as a once-weekly injection: Semaglutide is taken as a once-weekly injection, which may be more convenient for some people compared to taking a daily pill.

    It’s important to note that semaglutide is a prescription weight loss medication and should be used under the supervision of a healthcare provider. Your healthcare provider will be able to determine if semaglutide is appropriate for you and help you determine the best dosage and treatment plan.

    LIRAGLUTIDE

    DAILY Injectable brand names Saxenda or Victoza (FDA approved for weight loss)

    Liraglutide is a GLP-1 agonist weight loss medication, very similar to Semaglutide. It was initially developed as a medication for Type 2 Diabetes, however it also helps patients with weight loss. By activating GLP-1 receptors, this medication works to slow the rate at which your stomach empties, and to send signals to your brain to decrease appetite.

    GLP-1 works to increase insulin levels by activating cells in the pancreas. It also triggers hormone release to delay the emptying of the stomach, sometimes causing nausea.

    Notes on Liraglutide

    AVOID WHEN: Pancreatitis Gallstones; Family history of Thyroid Cancer; Thyroid disorders

    SIDE EFFECTS: Nausea (44%); Vomiting (25%); Diarrhea/GI distress (30%)

    EXPECTED RESULTS:

    The SCALE Trial showed patients can lose 6.2% over 52 weeks in conjunction with a daily 500 calorie deficit and increased walking (CI 7.5 to 4.6%).

    Weight Loss Medication: TRIZEPATIDE

    WEEKLY Injectable brand name is Mounjaro.

    Tirzepatide is the newest form of weight loss medication weekly injectible. It was recently approved for Type 2 diabetes and works through BOTH the GLP-1 receptor AND GIP receptors. BOTH GLP-1 and GIP receptors work to slow stomach emptying and decrease appetite.

    Both GLP-1 and GIP receptors work to decrease the rate your stomach empties– keeping you full for longer. They also work to decrease your appetite and cravings. However, this weight loss medication is meant to work in conjunction with a healthier diet and moderate/purposeful daily exercise for long term maintenance.

    Notes on Trizepatide

    AVOID WHEN: Chronic malabsorption; Pregnancy; Cholestasis/History of Gallbladder disease; Pancreatitis; Family history of Thyroid Cancer; Thyroid disorders

    SIDE EFFECTS: Nausea (44%); Vomiting (25%); Diarrhea/GI distress (30%)

    EXPECTED RESULTS:

    The SURMOUNT-1 trial showed expected weight loss of 22.5%. Additional trials have shown this medication in conjunction with a healthier diet and moderate/purposeful exercise is TWICE as effective as Semaglutide 1.0mg.

    AMG 133

    NOT ON THE MARKET YET…STILL IN PHASE 1 CLINICAL TRIALS. Showing the most promise, but it’s still early.

    MONTHLY injectable, no brand name indicated. Most like Trizepatide but administered MONTHLY.

    AMG 133 is a bispecific glucose-dependent insulinotropic polypeptide receptor (GIPR) antagonist and glucagon-like peptide-1 (GLP-1) receptor agonist molecule. AMG 133 mimics the agonist effects of GLP-1 and antagonizes the effects of glucose-dependent insulinotropic polypeptide (GIP).

    Difference between GLP-1 and GIP…
