Ingredients

  • 4 cups chicken shredded or chopped, rotisserie
  • 1 cup onion chopped
  • 1 cup celery chopped
  • ½ cup parsley chopped
  • 1 cup mayo homemade or good quality store bought
  • ½ tbsp black pepper or more

Instructions

  • Chop all ingredients and mix in a large bowl. Cover and refrigerate.

Notes

I like to keep this chicken salad made in my fridge every week. One serving is about 1/2 cup of chicken salad over 2-3 cups salad greens, cabbage, scallions and whatever other veg you like. Sprinkle salad with coarse salt and pepper and drizzle with 2-3 Tbsp olive oil
