I have been trying for a NO BAKE chocolate cheesecake recipe for a long time. These little cups came together with no baking, pretty quickly and low carb.
In a small bowl, sift together the almond flour, cocoa powder, and sweetener. Stir in the melted butter until the mixture is a coarse crumble.
Set aside the crumble.
Filling:
In a small microwave safe bowl, melt the chocolate and butter together in the microwave in 30 second increments.
In a medium bowl, beat the cream cheese, powdered sweetener, and cocoa powder together until fully combined. Beat in the cream and vanilla extract until smooth. Add the melted chocolate and continue to beat until creamy and combined.
Assemble:
In four separate jars or cups place a level tablespoonful of the chocolate crumble at the bottom of the cups. Then equally divide the chocolate cheesecake mixture between the four cups. Top each of the cups with a sprinkle of the remaining chocolate crumble.
