Cauliflower Rice Pilaf

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup onion small dice
  • 10 oz cauliflower riced
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 4 tbsp butter divided
  • 1/4 cup parsley fresh and chopped

Instructions

  • Heat oil in large skillet over medium heat. Add onions to hot pan and stir to soften for 1-3 minutes.
  • Add your cauliflower rice to the hot pan and softened onions. Stir to fully coat and heat the cauliflower.
  • Generously season the cauliflower with salt, pepper and garlic powder while stirring. Add 2 tbsp of the butter and stir to coat. Turn the heat down to low, cover and continue to cook the cauliflower for another 2-5 minutes.
  • Add the chopped parsley and the other 2 tbsp of butter to the seasoned cauliflower and stir to melt. Continue stirring to fully coat the cauliflower with the melted butter.
  • Serve and enjoy.

Notes

I like to use pre-riced cauliflower found in a bag in the produce section.  Sometimes I also find riced cauliflower in the freezer aisle of my supermarket or I freeze my fresh riced cauliflower.
When cooking this recipe, if my cauliflower is frozen I DO NOT DEFROST.  I cook right from frozen.  You may get a little water while cooking.  Simple continue to cook over medium heat with cover OFF to evaporate the liquid.
