Ingredients
3tspcacao butteror coconut oil
1 1/2cuplow carb white chocolate chipsLily's Brand
3scoopsprotein puffs, unflavoredPromix brand
1tsppeppermint extract
12dropsred food coloroptional
Instructions
Line 8x8 dish with parchment paper. Pour protein puffs into the 8x8 dish. Set aside
In a medium bowl melt the cacao butter (or coconut oil). Add the low carb white chocolate chips to the warm melted cacao butter and gently melt the chips. While the chips are melting add the peppermint extract and continue melting the chips until mixture is pourable.
I melt everything in the microwave in 10 second increments as white chocolate chips tend to be temperamental. If the chocolate seizes you can melt 1-2 tsp more cacao butter separately and then whisk in.
Pour melted white chocolate over the protein puffs in the 8x8 lined dish. Pick up the tin and gently tap it repeatedly on the counter until all the puffs are covered or at least touching the chocolate. Also make sure that all chocolate has been pushed to the corners of the pan.
Optional step...drop several drops of red food coloring (I use all natural food dye) sporadically over the white chocolate bark. Using the tip of a knife or toothpick gently swirl the red coloring over the entire pan in a swirling design.
Place pan in fridge or freezer until hard..usually 1-2 hours. Remove from fridge and lift parchment paper out of tin. Break bark into shards and enjoy.
Store in the fridge or freezer in an airtight container or ziploc bag.
