Baked Feta Sausage

Keto Baked Feta Sausage is one pan meal full of flavor without the carbs...and almost as easy as a "set it and forget it" dinner.

Ingredients

  • 1 lb Italian sausage spicy
  • 2 pints cherry tomatoes
  • 4 cups broccoli florets
  • cup olive oil + 2 Tbsp
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 oz feta cheese block form
  • 1/4 tsp red pepper flakes
  • 3 cloves garlic finely chopped
  • ½ cup basil leaves finely chopped

Instructions

  • Preheat the oven to 400°. Line a large baking sheet with parchment paper or tinfoil. Arrange all of your cherry tomatoes and broccoli florets on the lined rimmed baking sheet.
  • Pour ⅓ cup olive oil over tomatoes and broccoli. Sprinkle it all with salt and pepper. Toss the tomatoes and broccoli in the olive oil to completely coat.
  • Spread the tomatoes and broccoli to the outside of the rimmed baking sheet leaving a place for the block of feta cheese to sit in the middle of the rimmed baking sheet. Place the feta block of cheese in the middle of the baking sheet. All vegetables and feta should be touching or at least mostly fill the sheet pan.
  • Drizzle the remaining olive oil over the block of feta cheese sitting in the middle of the sheet pan. Sprinkle the red pepper flakes right on top of the block of feta cheese.
  • Using your fingers break apart the Italian sausage into chunks about the size of a tablespoon. Drop the chunks of sausage randomly over the tomato and broccoli.
  • Place the rimmed baking sheet into a 400° oven for 30 minutes. At the 30 minute mark check your sausage feta bake. You may want to turn your broccoli pieces over individually using tongs so as to not burn it.
  • Turn the oven up to 450* for another 5-10 minutes.
  • Remove the baking sheet from the oven and set on the counter. Sprinkle generously with fresh chopped garlic and chopped basil.
  • While holding the baking sheet with an oven mitt and using a heavy spoon, mash and mix the sausage, melted feta and all the vegetables together until all fully combined.
  • Serve and enjoy.
