Ingredients
1tbspolive oil
1onion chopped
1red bell pepper chopped
2clovesgarlic finely chopped
2lbsground beef
3tbsptomato paste
28ouncetomatoescan petite diced
1.5cupsbeef brothplus more if needed
.5tspchili powder
.5tspsalt
.5tsppepper
2tbsptaco seasoning
Instructions
Heat olive oil over medium high heat. Stir in the onions and bell peppers and cook for 2-4 minutes. Add in the garlic, and cook about 1 minute.
Push onion mixture to the side in the stock pot and then add the ground beef to brown.
Once the ground beef has started to brown mix with onion mixture. Add in taco seasoning, chili powder, salt, pepper, canned tomatoes with juice, and tomato paste. Stir to fully combine.
Pour in beef stock and bring to a simmer. Cover and simmer for at least 1 hour, but up to 3 hours at a low simmer to thicken the chili.
Serve with garnish of chopped red onion, chopped cilantro, cheddar cheese, pickled jalapeños, and sour cream.
Notes
*you may want to add more beef broth to thin out your chili.
