Our family really loves this creamy Chicken Artichoke Casserole. We fill ours with onions, spinach, artichokes and big chunky chicken to make this keto friendly dinner….and it has 6 servings. Double the recipe and bake in a 9x13 casserole dish to feed a crowd or to have as leftovers.

Ingredients
2tbspolive oil
½yellow onionsliced
4cupsspinachfresh (4.5 oz)
14ozartichoke heartsin water, rough chop
2tbspmayo
⅓cupsour cream
4ozcream cheesesoftened
½cupParmesan cheesegrated
1jalapeñomedium, seeds removed, small chop
3clovesgarlicfine mince
½tspsalt
½tsppepper
2cupschickencooked large chunk rough chop
¼tspred pepper flakesoptional
1cupmozzarella cheeseshredded
Instructions
Preheat oven to 400* and grease a small casserole dish. I use a 6x10” dish.
Add olive oil to a large skillet over medium heat. Add onions and stir for 1-2 mins to soften. Add fresh spinach to softened onions and stir until wilted, about 3-4 minutes.
Add artichoke to spinach and onions to heat through. Turn off heat and set aside.
In a large bowl mix together mayo, sour cream, Parmesan cheese, softened cream cheese, garlic and jalapeño. Season with salt and pepper.
Add chicken to the cheese mixture and toss to fully coat. Next, add in the spinach and artichoke mixture. Toss chicken and spinach mixture to fully combine.
Spread chicken into a casserole dish using a spatula or spoon to smooth out. Sprinkle red pepper flakes and mozzarella cheese over the entire casserole.
Bake at 400* for 15 minutes. Turn the oven to broil and brown the top for 1-3 minutes or until too is bubbly and crispy.
Remove from the oven and enjoy.

Side note: Double this recipe and bake in a 9x13” casserole dish to feed a crowd.You really want quick? You can try a large container of store bought jalapeno artichoke dip, thawed frozen spinach and a store bought rotisserie chicken to make this Chicken Artichoke Casserole. I have never made it this way, but if I were in a pinch that's what I'd do.
