Ingredients

  • 4 tbsp butter
  • ¼ cup onion fine chop
  • ½ cup celery fine chop
  • ½ tbsp rosemary dry
  • ½ tbsp thyme dry
  • 1 tbsp sage dry
  • 2 tbsp parsley fresh, fine chop
  • pinch salt
  • 4 eggs
  • 2 cups mozzarella cheese
  • 4 tbsp almond flour

Instructions

  • Heat up your mini dash waffle maker.
  • In a small skillet over medium heat melt butter. Add the fine chopped celery and onion to the melting butter and saute for about 1-2 minutes. Add in the rosemary, thyme, sage and fresh parsley and cook for 3-5 minutes or until onion & celery are soft. Set aside the skillet to cool.
  • In a medium sized bowl mix together eggs, mozzarella cheese and almond flour. Fold in the cooled sauted celery and onion season mix into the medium sized bowl mixture.
  • Spoon ⅛ of this mixture into your mini dash waffle maker. Let cook for 4-5 minutes. Remove and set aside your Thanksgiving Stuffing Chaffle.
  • Repeat the process until you have 8 Thanksgiving Stuffing Chaffles made.

Notes

**One serving is 2 chaffles=3g net carb per serving
**Reheat under broiler if necessary.
**I have 2 chaffle makers to speed up the process.
