Keto Gummy Worms

Using sugar free jello brand jello is not my first choice in health, but sometimes a girl needs gummies!

Ingredients

  • 1 packet sugar free flavored gelatin Simply Delish
  • 4 tsp powdered unflavored gelatin
  • ½ cup water

Instructions

  • Place the gummy bear or worm mold on a large baking sheet. This will make it easier to transfer after the molds are filled. Lightly oil the inside of each cavity of the mold.
  • Add the packet of sugar free flavored gelatin, unflavored gelatin, and cold water to a small microwavable bowl. Stir all ingredients together and let sit on the counter for 2-5 minutes to bloom.
  • After the gelatin has bloomed, place the bowl in the microwave on high for 30 seconds. Take out and stir. Place the bowl back in the microwave for another 30 seconds. Remove and stir making sure the mixture has fully liquified and all the sugar crystals have dissolved.
  • Moving along swiftly, use a small candy dropper to fill cavities or pour very carefully from spouted measuring cup. Wipe off any excess spill-over a the mold with a butter knife or lint free cloth.
  • Carefully transfer to the tray to the refrigerator to set for at least 1-2 hours for best texture. Remove tray from the fridge and pop out of the worms individually from the mold and enjoy.
  • Store gummy bears countertop or in the refrigerator in an airtight container.

Notes

***If you’d like to do this over the stove add the ingredients to a saucepan and let sit with NO flame for 2-5 minutes to bloom. After the gelatin has bloomed, turn the heat on the stovetop. Dissolve crystals over low heat until completely dissolved and slightly warmed about 2-4 minutes. Remove the saucepan from the heat and cool for several minutes. Proceed with filling the mold.
 
Simply Delish Jel Desserts brand can be found online or at Whole Foods or Sprouts supermarkets. I use this brand because it is sweetened with erythritol and stevia and colored with natural colorings like beet coloring. The other well known sugar free brand found easily in supermarkets use aspartame and artificial food dyes, therefore they are not preferred.
