Low Carb Tortillas

INGREDIENTS

coconut flour egg whites liquid baking powder water to thin coconut oil spray

STEP 1

Spray pan with cooking spray and set over medium heat. Quickly mix together all ingredients. Mixture should be watery.

STEP 2

While holding the handle of the small fry pan, pour in about ¼ cup of the watery mixture into the center of the pan and cook 2-3 minutes on medium heat.

STEP 3

Use a silicone spatula to gently lift the edges of the tortilla to check for doneness. Continue to watch and cook until you can spin the tortilla in the pan.

STEP 4

Take the spatula and flip the tortilla to cook the other side. You'll want some gentle browning on both sides, so continue flipping until you reach desired doneness.
