Avocado management is a real thing in my kitchen. Being able to manage avocado availability, ripeness, quantity.
Notice that each one of these avocados has a ripe sticker. They were all bought on the same day! And they will ripen all on their own time.
It’s a constant rotating of this green gold that helps me managing our supply. And I buy them all in various stages of firmness.
Assess the menu
Let’s be clear that most of my menu contains avocado in some form or another. However, I never know if this green beauty is going to take center stage or sit as a side.
The first step for me is in knowing who is going to be eating what and when. Then I need to check out what’s available in the market. The supermarket needs to manage their supply as well. Have you ever noticed that the day before Super Bowl Sunday the mountain of avocados at the market are all exactly ripe.
The third step is to buy in various stages of ripeness. I buy rock hard avos to ready to eat today. This way I can rotate in the ripe ones as the week goes on. I always store the avocados all together in a bowl on my cool counter. I keep them out of direct sunlight and let them just be happy.
