In my quest to have an easy weeknight family dinner, while keeping it keto AND easy, I came up with this Simple Chicken Chile Casserole. I use the canned MILD chiles, so we get the flavor without it being too spicy.
In the Keto/Low Carb world we have come to LOVE Fathead Pizza dough. But really…you don’t even need the dough or the sauce. Try these Keto Pizza Snacks with a simple slice of provolone cheese and some toppings.
Another one of my simple meal prep ideas for a weeknight family dinner. Not a lot of prep time on this Dijon Salmon so it’s an easy one to get on the dinner table quickly. Also…this is great served chilled over a salad for a lovely luncheon meal.
This chewy Double Chocolate Chip Cookie is the perfect balance between a brownie and a cookie. I use a combination of Allulose with a blend of Monk Fruit and Erythritol. There are many brands on the market, but know that this combo of the two low carb sweeteners is what gives this cookie it’s chewy texture….and we LOVE it.
A single banana can have up to 30g of carbs, so I rarely eat them. However, I love banana flavor and never want to feel deprived. These lovely muffins give me the banana flavor without all the carbs. Happy happy!
You don’t need a whole dessert or an entire slice of pie, but you just want a bite or two of something sweet. These Keto chocolate truffles are the answer to having that little bite, without having a huge dessert.
You want an easy weeknight meal then look no further. I could make this with a crust, but that just adds more time and more carbs. This way my Easy Keto Taco Pie is hot and on the table after a long day of work. And great as leftovers, too!
Most packets of taco seasoning have added corn starch and fillers. Trader Joe’s and Primal Palate are two exceptions that are pure ingredients but you can not always run to the store when dinner needs to be on the table. Here’s a great DIY recipe to always have on hand.
I like to think of these mini Olive Oil and Almond Cakes as something my Italian Grandmother would bake after school one day. Unfortunately I have no Italian Grandmother, but these still remind me of something very Italian.
Anyone that knows me knows I am not really a fan of pumpkin pie. However, Pumpkin Cheesecake Pie is a different story. All the flavor of the pumpkin pie, but in a cheesecake. And because it’s in pie form it bakes in half the time. Great for a fall holiday party.
I wearily looked in the mirror one day along with a mountain of half used crappy skin and makeup products I had amassed in a side drawer. I knew the head quarters were literally in my neighborhood, so it was time I stopped being a ding dong. I needed better and safer products in my life. That’s where Beautycounter comes in…
This is a great weekend meal and perfect for leftovers. My Lime Cilantro Carnitas can be served in low carb tortillas or just over my keto slaw…Either way this tender and flavorful shredded pork is the bomb!
A delightfully easy and no fail keto Fall dessert. Pumpkin and cream cheese are like an old married couple…they always go together. No crust means this Pumpkin Cheesecake Bars are lower in carbs and fewer time in the oven.
We have barely passed Labor Day yet and the Pumpkin Spice Lattes are flying off the shelf! A Starbucks single slice is a whooping 50g carbs for their pumpkin loaf….. I started thinking about how I could reduce those carbs, but still get my pumpkin fix.
I swear the secret is in seasoning the meat…otherwise you just have meat over a salad. Then add in everything you’d find on a burger ESPECIALLY the pickle and you’ve got the best damn Cheeseburger Salad EVER!
Spinach Feta Quiche is a great make-ahead meal for a family dinner, a lovely ladies luncheon or a wonderful Sunday Brunch, too. Using my almond flour crust makes this recipe low carb and keto friendly.
Avocado Pesto over Roasted Spaghetti Squash is one of the easiest vegetarian and keto-friendly meals I make in The Kellie Kitchen…and Peter LOVES it!
Avocado traditionally does not save well I kinda fudge it and am able to freeze any left over pesto. I simply cover with plastic wrap placing the film directly on the surface of the pesto to seal out any air. Then I freeze for up to a month. When I’m ready to bring it back to life I simply thaw on the counter. If there is any brown spots I scrape off and throw away, but you can eat it as the taste has not changed…I just don’t like the color.
Get out of the ’80s dieting and gym rat mentality and move into REAL health. A Keto-style diet is a lifestyle that’s sustainable. Don’t start over again and again…start here and find what works for you.
