Keto Lemon Pepper Beef

One Skillet Lemon Pepper Beef
We use a whole bag of fresh baby spinach in this Keto Friendly Lemon Pepper Beef. This is an easy “toss it all in the pan” type of meal.
You know how that bag of fresh baby spinach just stares at you? It judges you. The bag taunts you. That baby spinach challenges you to use it before it goes bad and you have to throw it away.
Same for that small box of pre-sliced mushrooms. Use ’em or lose ’em.

Dump it all in the skillet
I start with partially browning the ground beef for the Lemon Pepper Beef recipe. When the beef is still slightly pink I push it the the side and start cooking the onion and mushrooms.
Once the onion starts to soften I mix it all together and continue stirring.

That bag of spinach
Next we add in that bag of spinach and the salt & pepper to the Lemon Pepper Beef. I almost feel a sense of victory that I used that spinach successfully before it went bad.
Take that bag of spinach!

I continue stirring and folding the fresh spinach into the hot beef and onion mixture until it is fully wilted and mixed in to the Lemon Pepper Beef.
Lemon and Taste
While lemon and beef are not a super classic combo, it has quickly become a staple in our meal planning. The tangy lemon and the slightly spicy black pepper make this a meal with flavors to remember.

Serve with…
I like to serve Lemon Pepper Beef with mashed or riced cauliflower as a simple meal. My Cauliflower Cheese Casserole is also a hearty side dish making this a “meat and potatoes” kind of meal.

Ingredients
- 1 lb ground beef
- ½ cup yellow onion chopped
- 2 cloves garlic mashed
- 10 oz baby spinach fresh
- 1 cup mushrooms sliced
- ½ tsp salt
- 1 tsp black pepper
- 1/4 cup lemon juice
Instructions
- Heat a large skillet over medium high heat. Add the ground beef and break up the meat. Half way through browning the ground beef, move to one side of the skillet. Add the onion, mushrooms and garlic to the empty side of the skillet.
- Keeping the onion mixture separate from the beef, continue to stir until onion starts to soften. Once the onion has started to soften and the mushrooms have started to wilt, mix the beef with the onion mixture to fully combine.
- Next add in the salt, pepper and fresh baby spinach to the skillet meat mixture. Carefully fold the fresh baby spinach into the beef mixture until leaves are fully wilted.
- Turn off heat and stir in the lemon juice. Taste for seasoning and enjoy.
